It’s a green eating experience at Concordia College in Moorhead, Minnesota. Campus Dining Services has focused on recycling and product responsibility.

Examples of this green progress range from fuel to water and everywhere in between.

  • Dining Services is responsible for much of the recyclable material gathered on campus. It contributes 50 percent of the cardboard, 25 percent of the mixed plastic and 100 percent of the steel and tin.
  • Used fryer oil is taken to a local organic farm to be converted into biodiesel fuel for farm equipment.
  • Water in the dish room is filtered and recycled, saving hundreds of gallons of water a year.
  • Straws, napkins and various other items throughout campus are made from renewable resources.
  • Various efforts to decrease energy use, such as running some kitchen equipment on steam and installing motion-sensitive CFLs, have been undertaken.
